In theory, DORA suggest that you need to calculate the changes from the commit until it is running in production or in the hands of your users. We understand though that when working in a mobile application, your production environment happens to be the store. In practical, we suggest that you track the deployment that you do the closest to the store. For example, if you have a production-like environment (i.e. pre-production), you can actually match it to calculate lead time for changes.
Don't forget that lead time for changes must be useful to you in your context. It measures how long does it take to go from the start to deployment so you can identify bottlenecks in your ways of working. Make it practical to your context.
